Ingredients
- 2 pounds of very ripe strawberries, cut the tops off and cut them into chunks.
- 3 cups cold water
- 2 cups white granulated sugar
- 1oz fresh squeezed lime juice (about 1 lime)
- 12oz selter water
Steps

Put the strawberries in a pot with the water and bring to a boil. Then stir and reduce heat to low and simmer for 15 minutes

Strain juice from the strawberries through a strainer. Discard strawberry pulp.

Add the strawberry juice to a saucepan along with the sugar, stir until the sugar is dissolved and bring back to a boil. Then reduce to medium heat and let simmer for 5 minutes.

Cut heat and let cool. Store and refrigerate.

Add the lime juice and desired amount of syrup to a glass and top with a 12oz can of seltzer water. I've had best results with between 5-7 tablespoons of syrup to 12oz can of selter.
